Lingonberry Raw Cake


Me and my friend Paris decided to try our first raw cake. We ended up having a great morning brunch during this one summer Sunday. Here is the recipe for the lingonberry raw cake with the cashew cream on top.

The Cake Base

  • 3dl Almond Flour
  • 2 tbsp Coconut Flakes
  • 1 tbsp Cacao Powder
  • 5ml cinnamon
  • 5ml cardamon
  • hint of salt
  • 2 tbsp syrup
  • ¾dl water

The Lingonberry Base

  • 70g walnuts
  • 2dl syrup
  • 1.5dl coconut oil
  • 5ml vanilla extract
  • 300g lingonberries
